Chef Big John of Rouses Market shared a single-pot pasta recipe on October 29 that reduces active cooking time by combining vegetable preparation with boiling water. The dish, described as a bright summer option, features fresh green beans, sweet cherry tomatoes, and basil. By cooking the beans alongside the spaghetti, the preparation remains simple while allowing the fresh vegetables to remain the focal point of the meal.

The primary technique involves adding trimmed fresh green beans to the pot during the final six to eight minutes of pasta cooking. The chef advises checking the pasta package timing to ensure both components reach the desired texture simultaneously. This method eliminates the need for a separate pot or a draining step for the beans, keeping the workflow contained within one vessel.

While the pasta and beans boil, the sauce builds in a large, deep skillet over medium-low heat. A generous drizzle of extra virgin olive oil receives four thinly sliced garlic cloves, one chopped small chili pepper, and a few torn basil leaves. These aromatics cook for one to two minutes until fragrant, with a specific instruction to avoid browning the garlic. This gentle heat creates a base that provides a mild kick without overpowering the fresh vegetables.

Cherry tomatoes, halved and lightly salted, join the skillet for five to eight minutes over medium heat. The tomatoes soften and release their juices during this period, forming the liquid component of the sauce. The chef emphasizes seasoning lightly at this stage because the Pecorino Romano added later is salty. This balance ensures the final dish is not overly salted by the cheese.

One cup of pasta water is reserved before transferring the cooked spaghetti and beans into the skillet. The ingredients toss over medium heat for about one minute, with additional water added as needed to lightly coat the pasta. After removing the pan from the heat, freshly grated Pecorino Romano is incorporated in small amounts. Small splashes of the reserved pasta water are added while tossing, creating a creamy finish without breaking the emulsion.

Rouses operates multiple locations along the Alabama coast, including Mobile, Gulf Shores, and Orange Beach. The recipe is available for customers at these stores, which serve the region with fresh produce and prepared foods. The dish is recommended to be served immediately with additional Pecorino Romano, fresh basil, and a drizzle of olive oil. A simple green salad is suggested as an accompaniment to complete the meal.
